New Yummy Crockpot recipe

There's a restaurant on Kauai, Pomodoros, that has this awesome dish called Chicken Saltimbocca. I loved it!
My mother in law gave me this easy crockpot recipe and its just as good! Yay!!!!

Crockpot Chicken Saltimbocca

3 boneless skinless chicken breast
6 small slices of ham
6 small slices swiss cheese
1/3 C salad oil
1 Can Condensed Cream of chicken soup
1/2 C dry white wine
2 cups sliced mushrooms
butter

Combine:
1/4 C flour
1/4 C grated Parmesan Cheese
1 tsp salt
1/2 tsp ground Sage
1/4 tsp Pepper

Cut chicken breast in half, pound till thin. Place slice of ham and cheese and roll up and secure with toothpick. Dip chicken rolls in flour mixture. Save leftover flour mixture. Heat oil and saute chicken on both sides till slightly browned. Place in crockpot, add can of coup and white wine. Cover and cook on low 4 - 5 hours. Saute mushrooms in butter. Add to crockpot. Thicken with lefover flour dissolved in small amount of water. Serve over pasta.

OMG that looks so good. I still remember that saltimboca dish. I gotta try it, but it sounds high caloric. Shit. Why does Jamie have to be on a diet?

janell, you can make it for yourself and kainoa, and freeze the rest
